Gold Experience's ability, before it evolved into requiem, primarily revolved around the manipulation of life energy. This sounds incredibly vague only because it's seriously that vague in canon. In fact, one of the most notable things about his stand is it has no clearly defined limits. While most stand users have such limits to their powers, Giorno has yet to try something he found he couldn't do, so it appears the possible applications of his ability are only limited by his imagination.
First, as his most frequently used ability throughout the series, Giorno is capable of giving life to inorganic objects. For example, he can turn someone's suitcase into a frog, a finger into a fly, an inner tube into a fish, a hand into a piranha, a motorcycle into a hand, bullets into seeds. Honestly, it's a huge list. However, he's only ever shown turning them into small animals, as he's never turned an inorganic object into anything large than a fish big enough to drag two adults to the shore of an island for a fair distance. He can turn large enough objects into more than one animal however, as he turned a parking lot full of cars into a horde of frogs, and a stone pillar into a pack of scorpions.
Any object turned into an animal appears to obey Giorno's commands. If someone's body part is turned into an animal, it seems to be connected to the owner of the body part in a way, as he was able to command a fly to return to the owner of the body part it was turned into, in order to reveal their hiding spot. The nature of the object can have an effect on the animal in question as well, to a degree. By turning a glass vial containing some remnants of a powerful poison into a snake, the snake was created with an immunity to the poison in its blood, which he was able to use to cure himself of the poison in question. The animals also appear to be much stronger than a regular one. A beetle implanted into one of his enemies was strong enough to burrow its way out of his body through the head, ripping a large hole in it on the way out.
Another important aspect of his creations(when they're organic) is they cannot be harmed. Any attempt at injuring them will simply reflect the damage back onto the attacker, while leaving the creation completely unscathed. An example of this is when Luca attacked one of Giorno's frogs with his shovel; because he struck the frog from behind, rather than injuring the frog, a massive dent appeared in the back of his head as if he had been struck with the shovel instead. Giorno has used this creatively before, once covering himself in tree branches as a shield of sorts.
Another thing to note about his ability is he is capable of accelerating the growth of the creatures he creates as well. When Mista fired three bullets into the side of a building, Giorno turned them into seeds, at which point accelerated in growth and in a matter of seconds turned into several vines that latched into the end of a helicopter. He then altered the vines to turn into a large tree, strong enough to hold the helicopter in place and stop it from escaping. This all happened in about 10-15 seconds. Also, if he turns something into a frog egg or a larva, he can accelerate it to maturity in a matter of seconds.
The second application of this ability is flooding another person with life energy. By making contact with another person, be it through a punch or just touching them, Gold Experience can invigorate another person to incredible heights. They'll feel really energetic to the point that everything around them is moving far, far slower than they actually are. However, they'll soon realize that only their mind is moving that fast, and their body is moving as slow as everything else.
When this was used on Bucciarati, he moved so fast in his mind that while he was standing behind Giorno, his body hadn't even moved yet, and he could actually still see his body standing completely still in front of Giorno as he went to attack him. Because of this, it'll make it almost impossible for a person to move properly, as their mind is moving so fast it moves too fast to even operate their limbs. Also, as a result of their heightened perception, any pain they feel will also be slowed down. This is such a drawn out sensation that Bucciarati feared the shock of getting even a single punch from Gold Experience in this state would be enough to kill him.
Another thing Giorno discovered he could do was heal people using his ability. If someone loses a part of their body, be it an eye, a piece of their throat, a hand, etc, Giorno can replace it using his ability. He can take any inorganic object, such as a rock, and turn it into the part of the body they're missing, which will permanently replace the missing part. He can also turn any object lodged into someone into a part of their body, like bullets.
The downsides to this ability are that, while it is effective, his ability wasn't intended to be used for healing - so it's very painful. Secondly, depending on the extent of the damage, it can take a while. Replacing an eye won't take very long at all, but a tongue, a hand, an arm - these all take much longer. Also, if Giorno happens to lose both of his hands he will no longer be able to use this ability, as it requires at least one hand to function.
Speaking of which, and perhaps because of realizing his healing ability, Giorno is able to implant organically transformed objects into another person, only to turn it into something else as a means of damaging them. For example, when Baby Face picked up his hand, it entered his arm and transformed into a piranha, then ate its way through his torso and emerged from his back. He did the same when Baby Face stopped his punch by catching his fist, which again entered his body and turned into a motorcycle, weighing him down(and lets face it, having parts of a motorcycle manifest and burst through your body from the inside would hurt like hell.)
He's also able to recognize the life energy of someone he's used his ability on before, or at least someone he's spent a lot of time around. An extra step to this ability is he can sense the life force of any living thing inside of something if he touches it. For example, touching a plane allows him to sense every living thing inside of the place, and he can differentiate between them to an extent - animals don't read as strongly compared to the energy of a human. He can't actually tell who a person is unless he's familiar with them however, otherwise he'll just know the number of people, but he won't know who they are. This ability can also be applied to buildings, rooms, even human bodies - he can tell, for example, if there is more than one "life" inside of a body, like two souls. He did this to try and recognize which of his companions bodies Diavolo was hiding inside of when silver chariot requiem swapped everyone's souls into other bodies. He would have been able to tell how many consciousnesses there were inside of a body, and if he sensed Diavolo, it would have been a foreign consciousnesses he wouldn't recognize either.
NOW, THIS ALL COVERS GOLD EXPERIENCE. SO GREAT. WE'RE DONE RIGHT?
No. Because as you can see above, Gold Experience is now GOLD EXPERIENCE REQUIEM.
During the climactic final battle with Diavolo, Giorno stabbed himself with the stand arrow. In doing so, the arrow entered into Gold Experience and it underwent a metamorphosis into a new form, that being it's Requiem form. This granted it increased parameters, but also included one new ability, powerful enough to even overcome King Crimson's ability to erase time.
In activating this ability, GER operates independently of Giorno, reacting to any action that aims to cause him harm. What GER does is alter causality, erasing the effect of the action. For example, if you fire a gun at him, although you pull the trigger, nothing happens. If you stab him, although you did thrust your sword, the sword will never actually pierce him. If you erase the next ten seconds of time with the intention of getting behind him while time is being erased, and then try to punch a hole through his stomach, time won't be erased, and so on. It effectively cancels any action that would aim to hurt him.
KINDA FUCKING RIDICULOUS RIGHT.
But I'm throwing on some restrictions to try and limit it's effectiveness a bit.
The first is Giorno can't use this ability consciously. It's a purely reactionary ability GER will activate of its own volition if it believes Giorno is in danger, but Giorno himself cannot just use it whenever he feels like it.(He claims in the manga he doesn't even fully understand how it works anyway, just that he knows his stand is capable of protecting him.)
Secondly, because GER uses it when it senses Giorno is in danger from another person(or, y'know, conscious organism basically), there are circumstances it won't apply to. For example, if someone is going to shoot Giorno, obviously their intention is to harm or kill him, so GER will see fit to intervene. However, if Giorno trips on a rock or something and injures himself on the ground, it won't act because this is just something that's happened. To put it simply, GER will only intercept actions that give off killing intent - abilities that aim to harm him, people that aim to harm him, anything targeting Giorno with maliciousness or a desire to harm will be nullified. Acts of god, chance, whatever you want to call them, won't.
Thirdly, GER only protects Giorno using his erasure ability. He can't order his stand to intervene and defend someone else using the erasure ability - he can still have it physically block an attack or use its other ability to intervene somehow, but if someone he is trying to protect is out of his range and they are attacked, he'll be unable to erase attacks thrown towards them. It only acts on instinct to defend its master, and because Giorno doesn't understand the erasure ability, he can't make it use it to protect someone else.
